Ms. Yajia (Arka) Guo BSc
MSc Student Department of Health Science

Yajia (Arka) Guo started her research at Jinan University in Guangzhou, China, where she completed her undergraduate degree in food science in 2017. She investigated the effect of different emulsifiers on crystallization behaviours of diacylglycerol-enriched margarine emulsion. Currently, she is a Master's student in Pharmacy at the University of Saskatchewan. she is working with Dr. Martin Reaney and Dr. Jane Alcorn on oral pharmacokinetics and hypocholesterolemic effect of flaxseed lignans in rats.

Dr. Rana Mustafa BSc, MSc, PhD
Professional Research Associate Department of Plant Sciences

Dr. Rana Mustafa is a Professional Research Associate at the University of Saskatchewan and the Research and Development Food Scientist at Prairie Tide Diversified Inc. Dr. Mustafa has built her international expertise in food science and business development for around fifteen years of research and teaching at universities and industries in France, Syria, and Canada. Dr. Mustafa is driven by her passion for developing new and healthy food products in academic and industrial settings. She possesses unique expertise in developing flax and pulse-based functional food ingredients and converting them into healthy, marketable products.


Ms. Fina Nelson BSc, MSc
Research Technician Department of Plant Sciences

Fina is a Research Technician with the LQU Research Team at the University of Saskatchewan, managing wet chemistry and analytical labs. She received her Master’s of Science in Geochemistry and Bachelor’s of Science in Geology from the University of Saskatchewan. Fina has a background in quality control and geochemistry, experience with a wide variety of instruments and equipment, and a strong interest in promoting a safety culture. As a research technician with LQU, Fina’s primary goal is to facilitate the research of students and staff. This includes assisting with experimental design, troubleshooting procedures, acquiring or problem-solving supplies and equipment, training in lab and safety protocols, and analysis by HPLC, GC, and/or TOF-MS. Project topics include foods, oilseed and pulse crops, fermentation, and ethanol refinement. Fina’s technical skillset has been an asset in food and agriculture research teams. Before joining the LQU Research Team, Fina was Lab Manager for the NSERC Industrial Research Chair Aqueous and Environmental Geochemistry Lab. As a lab manager and from previous work as a research assistant, she has participated in stable isotope, aqueous, rare earth metal, and environmental geochemistry. Fina is driven by her curiosity and love of new challenges and will continue to participate in the centre of innovative and practical research to improve the lives of Canadian and Saskatchewan people.


Mr. Bin Peng BSc, MSc
PhD Candidate Department of Plant Sciences

I am a Ph.D. candidate in Nutrition and Food Hygiene at Nanchang University, China. My research area is the modification and application of structural lipids. I focus on lipid quality and utilization, specially modified lipids using chemical, enzymatic or biological methods. During September 2015 to 2019, I worked in the State Key Laboratory of Food Science and Technology, Nanchang University as a Lab Assistant. I managed the GC and HPLC analysis of samples including plant extracts and oils. I am currently a visiting student at the University of Saskatchewan.
